Roast potatoes with rosemary ! Batatas assadas com alecrim !

I’ve learned to roast potatoes in Italy many years ago just putting some rosemary sprigs on top of them, adding salt and olive oil.

But I found out now that this other way I saw a friend making them doubles the taste !

Aprendi a fazer batatas ao forno com alecrim na Itália. Sempre fiz com alguns ramos de alecrim sobre as batatas, azeite e sal.

Mas, depois de ver uma amiga italiana fazendo deste outro modo, experimentei e adorei ! Ficam muito mais saborosas !

ROAST POTATOES + ROSEMARY
Prep time: 30 mins Cook time: 45 mins Total time: 1 hour 15 mins
Serves: 4-6

INGREDIENTS
1 kilo / 2 pounds potatoes
½ cup extra virgin olive oil
6 sprigs of fresh rosemary
2 cloves garlic
salt
INSTRUCTIONS
About an hour (or more if possible) before you are going cook the potatoes, strip the leaves of the rosemary into the olive oil. Add the two peeled cloves of garlic, and with an immersible blender, whizz it about 10 to 15 seconds. You don’t want to puree it, just chop up everything roughly. Let sit for at least an hour at room temperature.
Preheat oven to 350F/ 180 C.
Peel and chop the potatoes into 1 inch pieces.
Place them in a bowl, and toss with the rosemary olive oil.
Lay them out on top of a parchment lined oven tray, in a single layer. You may have to use two trays. Salt liberally. More salt than you think you should. Potatoes really soak it up. Toss again to distribute the salt.
Place in preheated oven and bake until golden, about 45 minutes.
Serve immediately.

Batatas ao forno com alecrim

Tempo de preparo :30 min. Ao forno : 45 min. Serve : 4 a 6 pessoas

Ingredientes :

1 kg batatas

1/2 xícara azeite extra virgem de oliva

6 raminhos de alecrim

2 dentes de alho sal a gosto

Cerca de uma hora antes (ou mais) de assar as batatas, retire as folhas do alecrim e coloque no azeite. Adicione os dois dentes de alho e bata tudo rapidamente por cerca de 10 a 15 segundos com um misturador elétrico (tipo minipimer). Não bata demais, somente o suficiente para cortar um pouco o alho e as folhas de alecrim. Deixe a mistura descansar cerca de uma hora em temperatura ambiente.

Pré- aqueça o forno a 180 graus

Descasque e corte as batatas em cubos. Coloque-as num tabuleiro e cubra com a mistura do azeite com  alho e alecrim. Adicione o sal, misture bem e leve ao forno por 45 minutos ou até dourar.

Sirva quente.
